We are in the Ribera del Duero, Spain.

The vineyard is the main focus , and requires year-round manual work: dry winter pruning, green pruning, lateral shoot removal, cluster-thinning, and of course, manual harvest.

Harvest is the most vital and exciting moment of the year. Determining the right time to pick the grapes, the exact day they express their full potential, is crucial. Our winemaking team controls the evolution of our vineyards year-round to define and perform the required work in the field according to the season. Starting in August, once veraison is underway, our team visits the vineyards daily to closely follow the ripening process. In September, on-site organoleptic tasting coupled with grape sample testing in the winery’s laboratory, help determine the right time for harvesting each vineyard.

By mid-September and early October, harvest is fully underway. These are two frantic weeks where the climate is key. All our vineyards are manually harvested, with a first selection on site. Only those grape bunches in optimum condition are hand-picked and placed in small boxes to ensure they don’t burst with the weight, and to preserve them from oxidation.
